Deleting the intern memory

When I are going to flash a Custom ROM, can I delete ALL of the files on the internal memory, or are there (DO NOT DELETE !!!) system files on it ?
The same as I flash with Odin ?

After flashing, I see maps from programms before the flashing, so I want a clean phone.
